Since I embarked on this new writing/blogging career, I am grateful for no longer feeling that stressful, anxious Sunday afternoon dread. Finding what you were really meant to do (your authentic self) makes a huge difference in how you feel about yourself and life in general. I am also grateful for a Sunday spent kayaking in the ocean, under the warm sun, watching fish, sting rays, and manatees. The only thing making this kind of super Sunday even more super is wrapping it up with a tasty, tropical, and frosty cocktail.
With just a bit of extra effort, using fresh fruit, and making a stevia simple syrup, this margarita recipe is off the charts with a fresh taste and lower sugar content. Hope you love it as much as I do!
Strawberry Key Lime Margarita
Makes 4 cocktails
For simple syrup:
- 1/4 cup stevia
- 2 cups boiling water
- 1 cup stevia simple syrup
- 1 cup Key lime juice
- 6 cups water
- 1/2 cup key lime juice
- 1 pint organic strawberries
- 2 cups crushed ice
- 2 cups homemade limeade
- 1 cup tequila
- 1/8 cup Triple Sec
Make simple syrup: add stevia to the boiling water. Shake or stir till dissolved. Let cool. Store in refrigerator.
For limeade: combine all ingredients. Taste and adjust to taste for tart/sweetness. Store in refrigerator.
Now for the magic! For the margarita, add all ingredients to a large blender. Blend until frothy. Add enough ice to desired consistency. Serve in 4 margarita glasses.
If desired, you can rim a glass with key lime juice and fine sugar. Garnish with a slice of lime and a strawberry. How delicious is this? Are you feeling summery yet? Yes? You’re welcome!
